A good breakfast sandwich is hard to beat. You want something that leaves you feeling full, but not heavy. These vegan Breaded Tofu Breakfast Sandwiches are a great option for a lazy Sunday brunch, or great for the weekdays when you want your morning to feel a little comforting. The seasoned and breaded tofu, smoky tempeh bacon, and seasoned spinach mix perfectly together and are one of my favorites for brunch.
