Vegan Perfect Fit Protein Waffles with Strawberry Syrup

Last summer, I got into making protein waffles. I tried several recipes but could not find one that was the right consistency. Most were too dense and too dry. So, I decided to take things in my own hands and try my hand at creating a vegan protein waffle using Perfect Fit protein. They turned out to be delicious!

What I like about Perfect Fit is that it is raw, gluten-free, and vegan. Because it uses brown rice protein, it actually also works really well for baking. More so than any other protein powder that I have tried. While I have made these waffles using other protein powders, they just turn out better with Perfect Fit. If you do not have Perfect Fit, try to find a brown rice protein powder for the best results.

For this recipe, I use the same waffle recipe that was originally shared – Vegan Protein Waffles with Perfect Fit. I will re-list those ingredients below to make grocery lists easier, but please follow the instructions in the original post for making the actual waffles.

What you will need to make Vegan Perfect Fit Protein Waffles with Strawberry Syrup:

  • 1/2 a ripe banana, mashed
  • 3/4 cup unsweetened, plain almond milk
  • 1 teaspoon raw apple cider vinegar
  • 1 teaspoon vanilla extract
  • 7 tablespoons gluten-free flour
  • 1 scoop or 1 package vanilla Perfect Fit protein powder
  • 1 teaspoon baking soda
  • Coconut oil spray
  • 1 cup fresh or frozen strawberries
  • 1 teaspoon water
  • 1 teaspoon vanilla extract
  • 1 tablespoon chopped almonds

How to make Vegan Perfect Fit Protein Waffles with Strawberry Syrup:

  1. Make the waffles following the directions in the original post.
  2. In a small sauce pan, combine the strawberries and water. Cover and cook over medium-low heat about 5 minutes, stirring often. The berries should start to cook down a little and there should be more liquid in the pan than when you started.
  3. Add in the vanilla extract and continue cooking, stirring occasionally, for another 5 minutes. This should thicken the syrup up.
  4. Top the waffles with the berries, syrup, and chopped almonds.
  5. Enjoy!
