Fresh Spring Rolls with Peanut Sauce

Lately, we have been on a spring roll kick. These spring rolls are fresh, easy to make, and delicious! Including the prep time, I would say that these spring rolls with peanut sauce take about 30 minutes to make. This makes them perfect for a quick and healthy meal. They are a fun alternative to salads and I love that I can mix and match for different flavors.

Suggested below are ingredients that we use a lot when making these spring rolls, but you can use any combination of fresh vegetables that you like.

Fresh Spring Rolls with Peanut Sauce

What you will need to make Fresh Spring Rolls with Peanut Sauce:

  • 1 package rice paper
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 cup cucumber slices
  • 1 cup pea shoots or bean sprouts
  • 1 cup mango slices
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh basil leaves
  • 8 ounces tofu, pressed and sliced
  • 2 tablespoons chunky peanut butter
  • 2 1/2 teaspoons red miso paste
  • 2 teaspoons fresh lime juice
  • 1 teaspoon maple syrup (if you do not have high-quality maple syrup, agave will work)
  • 3 cloves garlic, peeled
  • 2″ piece of fresh ginger, peeled
  • 1/8-1/4 cup water

How to make Fresh Spring Rolls with Peanut Sauce:

  1. Prepare all the fresh vegetables. You can use any combination that you like, but what is suggested here is a mix that is bright, colorful, and a selection of often easy to find items. I love to mix vegetables, fruits, and herbs in mine!
  2. In a food processor combine the peanut butter, miso paste, lime juice, maple syrup, garlic, ginger, and 1/8 cup water. Pulse until well combined and smooth. Check the consistency and add more water only if desired.
  3. In a large plate, add a tiny bit of warm water. You will use this to soften the rice paper. Soak the rice paper in the water for about 30-45 seconds. It should be pliable and soft after.
  4. Lay the rice paper on a flat surface and layer in the vegetables, mango, and herbs. It is also your choice if you want to add some sauce into the roll, or use it on the side for dipping.
  5. Roll up the rice paper similar to how you would a burrito. Because the rice paper is wet, it will stick to itself and easily seal in the ingredients.
  6. Enjoy!
